Made-to-Order tofu soups, the idea of the traditional Soon tofu Soup, which in S. Korea usually comes with Soon tofu (“soon” meaning soft), clams and vegetables in a spicy broth, and catered it to whatever the customers wanted in their soups. Choice of variety combinations of flavors of soon tofu, barbecued galbo, bulgogi, spicy chicken, and spicy squid.

It’s quivery soft, like custard, but flavored with a savory broth filled with any number of good things from beef, to seafood, to pork. It’s just like the tofu in tofu fa, if you’ve ever had that.

The rice also comes cooked in another stone crock and the server is supposed to spoon it out for you and then put hot water into the empty rice crock to make a sort of rice porridge that is refreshing to some.
