Braised Dubu in Soy Sauce: Dubu-jorim is a side dish made by lightly frying dubu (tofu) in an oiled pan and braising it in soy sauce, gochut-garu (red chili pepper powder), sugar, green onions and garlic. Dubu, which is made from beans, is one of the most important sources of protein in vegetarian meals. In Korea, dubu is widely used in various dishes, including main dishes, side dishes, soup and jjigae.

Ingredients: 1 package firm dubu (tofu), (10oz, 300g), ½ tablespoon salt, 1 tablespoon vegetable oil, 1 tablespoon sesame oil, ½ cup water
Seasoning for braising, 3 tablespoons soy sauce, 1 teaspoon coarse gochut-garu
(red chili pepper powder), 1 tablespoon sugar, 1 tablespoon minced green onion, 1 teaspoon minced garlic, 1 tablespoon toasted sesame seeds, crushed

Preparation:
1. Cut the dubu into rectangles approximately1×1.5×0.2-inch (3×4×0.5-cm) thick. Sprinkle salt and set aside for 5 minutes.
2. In a small bowl, combine all the ingredients of sauce for braising and mix well.

Cooking:
1. Pat dry the dubu with a paper towel to remove exess water.
2. Heat the vegetable oil and sesame oil in a large skillet over medium-high heat. Carefully add the dubu pieces and sear until both sides are golden
brown.
3. In a small saucepan, layer the seared dubu pieces, adding the sauce for braising.
4. When it boils, reduce the heat to low. While the dubu is simmering, continue to ladle the cooking sauce over the dubu. Dubu will be done once most of the sauce is absorbed.
